What I've been told about many Middle Eastern foods being called 'Lebanese' is that because of its colonial-era links, especially with France, Lebanese food was considered higher status than that of other parts of the Middle East, even if it was very similar, so a lot of restaurants around the world called themselves Lebanese to sound fancier - even if the proprietors were actually from other parts of the Levant.
