“How can we create wines using only the resources of this place, to express only the flavor of here?” This was the question Cristián Vallejo, Chief Winemaker at VIK Chile Winery, posed ahead of breaking new ground with STONEVIK, considered the ultimate natural wine.
Biodynamic winemaking has been at the forefront of Chile’s most innovative winery since its conception in 2006. Alexander and Carrie Vik spent two years researching where they could fulfill their ambitions of low-intervention, terroir-driven winemaking alongside an art-filled, eco-luxe hotel. That place turned out to be the Millahue Valley — a sub-region of the Cachapoal Valley, burrowed between the Andes and the Chilean Coastal Range.
