As the sun dipped below the horizon and cast Cabo’s famous arch in a warm golden hue, I found myself sipping a tequila flight at Rooftop360, the lavish rooftop bar at Corazón Cabo Resort & Spa. Knowledgeable experts shared the history and unique qualities of each pour. A live saxophone player filled the air with sultry, soulful tunes that perfectly complemented the breathtaking views and libations.

The vibrant atmosphere and sweeping views of the Sea of Cortez reminded me that adventure could be found in the most luxurious of settings.

Corazón is one of the newest luxury resorts in Cabo San Lucas. Located on the coveted shores of Medano Beach, the resort features a new tower with 310 contemporary rooms and suites, some with sprawling balconies and private hot tubs. The property also features two infinity pools with endless views of the ocean and the arch, a full-service spa, a private beach club, an on-site brewery, and more.

The draw to the area only continues off the property with activities that can be set up through the concierge. On one morning of my trip, I took an e-bike tour with Cabolectric that was a breath of fresh air — literally and figuratively.

After a quick shuttle to San Jose and a brief safety orientation, my group set off on our electric bikes, the gentle hum of the motors propelling us forward with ease. We glided along the coastline and through the city streets. With each turn, the views became even more awe-inspiring as we soaked in the rugged beauty of the coastline.

As the heat of the day rose, we dove into the refreshing waters for a snuba adventure. This unique experience combined the best of scuba diving and snorkeling, allowing us to fully immerse ourselves in the vibrant underwater world. With our air tanks floating above on rafts, we explored the coral reefs teeming with life, making eye contact with curious Yellowtail Surgeonfish while the knowledgeable instructors guided us through the crystal-clear waters.

When hunger called, we answered with a sumptuous meal at Aleta, Corazón Cabo’s waterfront, open-air restaurant. The daily caught seafood was the epitome of freshness, and having the opportunity to choose both our catch and preparation made each dish a personalized delight. The laid-back atmosphere, enhanced by the sound of waves gently lapping the shore, provided the perfect backdrop for a memorable dining experience.

The following morning, I eagerly hit the water once again, this time with Cabolectric’s Electric Surfing (E-Foil) and Crystal Kayaking experiences. These eco-friendly water sports not only offered unique perspectives of the ocean and shoreline but also allowed us to marvel at the underwater world beneath us. As we glided above the waves on our E-Foil boards, the electrifying sensation of effortlessly flying over the water was truly mesmerizing. On the other hand, the Crystal Kayaking experience provided a serene and intimate connection with the marine environment, the transparent kayaks revealing the vibrant sea life below as we paddled through the clear, azure waters along Cabo’s pristine coastline.

After I had my fill of excitement, I relaxed in one of the Corazón Beach Club’s VIP cabanas that offer a perfect blend of comfort and privacy. The attentive staff ensured that every detail was taken care of, from refreshing cocktails artfully crafted by skilled mixologists to an array of bites inspired by the local cuisine.

The final evening was all about getting out on the water in a different way. I embarked on a sunset journey aboard Animalón by The Sea, Los Cabos’s first floating restaurant helmed by acclaimed chef Javier Plascencia. The five-course seasonal menu was a gastronomical masterpiece, each dish crafted with the finest flavors of Baja and paired perfectly with an exquisite selection of wines.

As we sailed through the Sea of Cortez, savoring each delicious morsel and sighting majestic marine life, it became clear that a stay at Corazón Cabo Resort & Spa is equal parts luxury and adventure.
