Khinkali are Georgian dumplings that feature various fillings such as beef, pork, mushrooms, potatoes or cheese. They’re usually served steamed or boiled in either broth or water. The dough is made from all-purpose flour, sometimes with some yeast added for extra flavor. Then, the filling is placed inside the dough before being formed into round shapes resembling a standing cylinder. After the shape has been completed, small pleats are formed around the edges which gives them their distinctive look.

The pleats are not just for looks; they serve an important function as well! The pleats act like little compartments that hold onto the juices and stock inside the dumpling which keeps your khinkali juicy and flavorful all throughout eating them. It also means you don’t have to worry about spilling any of that deliciousness when you take a bite.

Khinkali make an excellent side dish to any meal but can also be eaten as an appetizer or main course — depending on how many you decide to eat. They pair particularly well with soups and stews but can also be enjoyed as part of other meals. No matter how you choose to enjoy them, rest assured that these delicious dumplings will add some great flavor to your meal.

Khinkali can be found throughout Georgia in both traditional restaurants and street vendors alike. If you’re looking for a truly local culinary experience in Tbilisi (the capital city), head over to Hamazgayin Kari or Darika Cafe for some delicious khinkalis served up fresh from their kitchen. For those who want something more casual, street vendors all over Tbilisi serve up piping hot khinkalis that won’t disappoint.
